Red
yeast rice is a fermented product
of rice on which red yeast (Monascus
purpureus) is grown. This product
has been used in Chinese cuisine
and as a medicinal food to promote
"blood circulation" for
centuries. In Asia, red yeast rice
is the main dietary ingredient used
to make rice wine, as a flavoring
agent, and to preserve the flavor
and color of fish and meat as well.

is said that the medicinal
properties of the red yeastfrom
rice favorably impact lipid
profiles of hypercholesterolemic
patients.
